Sweet Potato flatbread is a great grain free way to make a sandwich. It is AIP friendly. There is a bit of an art to making these. I use about 1/2 to one cup of cassava flour for every three cooked sweet potatoes. I use a cast iron press to make mine. The trick is you have to lightly press the dough or it will stick to the parchment paper. Cooked sweet potatoes, cassava flour, garlic powder and salt. Mix it all together and you’ll know that the dough is the right consistency when it feels like Play Dough. Then chill the dough in the refrigerator. Make a little palm size balls of dough and flatten it between parchment paper. Cook with whatever kind of oil you like until golden brown on both sides.

I have tried to make the flatbread with other grain free flours when I have been out of cassava. Trust me it will not work without Cassava flour. The tortilla press also makes it way easier to make the flatbread.
