I am all about saving money. Sometimes you have to spend money to protect your money. I am so thankful I paid the extra $27 for trip insurance on my son's flight home for Christmas. My son was injured two days before his planed flight and could not come home. So, because I bought the trip insurance I have a flight credit for when he can fly home.

Chipotle Mexican Grill's Halloween tradition Boorito returns Thursday.
From 3 p.m. to close at all restaurants nationwide, costume-wearing fans can score a $4 burrito, bowl, salad or tacos for the Halloween meal deal.
“It’s always a fun time, and it’s an institution here at Chipotle,” Chris Brandt, the fast-casual chain's chief marketing officer, told USA TODAY.

Years ago I was just told to take my pill everyday and I would be fine. That is not true and there is so much you need to learn to advocate for yourself.

Sweet Potato Flatbread


Sweet Potato flatbread is a great grain free way to make a sandwich. It is AIP friendly. There is a bit of an art to making these. I use about 1/2 to one cup of cassava flour for every three cooked sweet potatoes. I use a cast iron press to make mine. The trick is you have to lightly press the dough or it will stick to the parchment paper. Cooked sweet potatoes, cassava flour, garlic powder and salt. Mix it all together and you’ll know that the dough is the right consistency when it feels like Play Dough. Then chill the dough in the refrigerator. Make a little palm size balls of dough and flatten it between parchment paper. Cook with whatever kind of oil you like until golden brown on both sides.

I have tried to make the flatbread with other grain free flours when I have been out of cassava. Trust me it will not work without Cassava flour. The tortilla press also makes it way easier to make the flatbread.


Iron is Important

Iron is so very important. I have struggled for years with low iron. My iron numbers are now in normal rang and I am working for optimal iron levels. My numbers got better when I added a Vitamin C with my iron. Something so simple helped but I was never told by a doctor that you need C to get the iron where it needs to be. I had to learn and study for myself. If you have low iron it is important to get your numbers optimal. If you take a thyroid RX DO NOT take it with iron. Your thyroid RX will not work as it should if you take it with your iron. You need to wait a few hours after taking thyroid RX before you take your iron. As always educate yourself and work with your doctor.

Vitamin D and Vitamin K

There is so much to know about Vitamin D that doctors are not telling you. D is so very important to our health. It's the D3 form you need to take. I struggled for years with very, very, low D. Nothing helped until I started taking this D3 and added in a Vitamin K. K helps the D get to where it needs to be. As always work with your doctor but educate yourself.

Everyone needs to find what works for them. Make sure you are working with your doctor. Here is a link to a great multi Smarty Pants. If you can only take one thing this is what I would take. The most important part, the vitamin b is methylated. If you have almost any health issues you might need to always take B in t's methylated form. Here is info on MTHFR and methylated folate.

AIP Plantains Chip at Kroger

Finding an AIP  crunchy treat that is 100% compliant can be hard. Today my AIP friends look what I found at Kroger!!! 100% compliant plantain chip for only $2.50 a bag. They are very good.


Chocolate Everything Free Bread/Brownie


This is a recipe that is always a hit even with my non-AIP friends. I made this recipe up so if you want all those fancy nutrition facts you often see on recipes you will not find those here.

Chocolate Everything Free Bread/Brownie

1/2 cup coconut flour and 1/2 cup tapioca starch,  
1 bananas mashed, 
1/2 cup coconut milk 
1/3 cup cocoa
1 ripe fresh avocado, halved, seeded, peeled and mashed 
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/2 tsp. baking soda
1/4 tsp. baking powder
3/4 cup coconut sugar
1/4 a cup Life is Good chocolate chips mixed in and 1/4 a cup on top while baking
Sea salt lightly on the top of the loaf if you want or not

Instructions 
Preheat oven to 350°F. Grease or use parchment paper 8x4-inch loaf pan or Brownie Pan

In a small bowl combine coconut flour, tapioca starch, cocoa, salt, cinnamon, baking soda and baking powder; set aside.
In a large bowl beat avocado, banana and coconut sugar at medium speed until smooth. Fold in chocolate chips, and dry ingredients into avocado mixture until blended; remove to prepared pan. Top loaf with chocolate chips and about 1 teaspoon of sea salt

Bake 50 minutes; cool. Cut with sharp serrated knife for best results

New Blog Focus AIP Diet

I started this blog about 10 years ago. At the time I was a stay at home mom of three very young kids. I was very good at saving money and had a passion to help other moms Save Money and Stay Home (SMASH) with their kids. I still have a passion for saving money but my focus the last few years has been rescuing my health.



Seventeen years ago, when I was expecting my second child I told my OB in passing how worn out I was. It was feeling extreme exhaustion. She ran some blood work and told me I had hypothyroidism. I was 30 years old. She smiled and said all I needed to do was take one pill a day for the rest of my life and I would be fine. I remember calling my sister crying at the thought of taking a pill for the rest of my life.

I got over the tears, took the pill, felt okay and went about life the mother of two small children. I am tall and had been very thin my whole life. After my second child was born I kept on some baby weight and thought that was just what happens after two kids.

A few years later I had baby number three. Again I kept on a bit of baby weight and assumed that was just what happens after three kids. Then after baby three all these other issues started showing up and I assumed it was just aging until the issues got so bad I know they were not normal. I kept going to my doctor and was being told all was fine. All was not fine and I knew it. I started talking to friends with hypothyroidism and learned so much no doctor ever told me. I learned what test to ask for and I learned to change my lifestyle.

My new mission with this blog is to share money saving tips but also to share autoimmune diseases healing tips.

The first place to start healing from an autoimmune diseases is to understand what your autoimmune diseases is doing to your body and how to stop the damage. For me the key to stopping the damage has been the The Autoimmune Protocol Diet (AIP).


The AIP diet is based on a belief that autoimmune conditions are caused by something called a "leaky gut", which is medically now referred to as altered intestinal permeability.
The theory is that small holes in the gut cause food to leak into the body. This is thought to cause the immune system to overreact and start attacking bodily tissues in error.
By eating nutrient-rich foods and avoiding inflammatory ones, the AIP diet aims to heal any holes in the gut. This is thought to help:
  • reset the immune system
  • prevent the autoimmune response
  • reduce symptoms of autoimmune diseases
  • prevent the occurrence of secondary autoimmune diseases
People who do the AIP diet should follow it strictly for a few weeks and then slowly reintroduce foods that they have avoided.
The idea is to see if there is a reaction when the food is reintroduced. If there is a reaction, the suggestion is that a person should exclude this food from their diet long-term.

Foods to eat on the AIP diet

These include:
  • meat and fish, preferably not factory raised
  • vegetables (but not nightshades, such as tomatoes, eggplants, peppers, and potatoes)
  • sweet potatoes
  • fruit (in small quantities)
  • coconut milk
  • avocado, olive, and coconut oil
  • dairy-free fermented foods, such as kombucha, kefir made with coconut milk, sauerkraut, and kimchi
  • honey or maple syrup (but only to be used occasionally, in small quantities)
  • fresh non-seed herbs, such as basil, mint, and oregano
  • green tea and non-seed herbal teas
  • bone broth
  • vinegars, such as apple cider and balsamic

Foods to avoid on the AIP diet

These include:
  • all grains, such as oats, rice, and wheat
  • all dairy
  • eggs
  • legumes, such as beans and peanuts
  • nightshade vegetables (tomatoes, eggplants, peppers, and potatoes)
  • all sugars, including sugar replacements (except for occasional use of honey)
  • butter and ghee
  • all oils (except for avocado, coconut, and olive)
  • food additives
  • alcohol
